I normally don't check online for what's in my box, but I'm longing for celariac and lo! they are in this week's box which will be waiting for me when I get home. Will use it for a gratin and soup later this week.
I've still got some sweet potatoes and beets left from last week, and an aubergine that peers out of the fridge every time I open it. Current plans include making a moussaka for the aubergine, and some sweeet potatoes roasted in maple syrup.

A melazane parmigiana is a great use for aubergines too... especially as it's Vegetarian Week!
